Combining underline vs underscore
Typing underscores between letters (l_i_k_e) puts characters on the baseline between letters. The combining low line (U+0332) sits under each character and joins up into a continuous underline — closer to a real underline. This tool uses the combining mark.
How to copy and paste it

Where it survives and where it doesn't
Underlined Unicode renders in many chat apps, some social bios, and plain-text editors. Instagram and a few others normalise combining marks away, so the base letters stay but the line disappears. There's no workaround on a platform that strips them — the same applies to the strikethrough tool.
Underline in documents
It pastes into Word and Google Docs and displays, but for a document you'll keep editing, the app's own underline button is sturdier because it's a text attribute rather than a stack of marks.

They look similar in a preview and behave completely differently when pasted, so it is worth knowing which one you have.

Where an underscore is read as a space, and where it is not
Underscores are the most portable option and also the least decorative. In a username they are often the only punctuation allowed, so they function as separators rather than as emphasis. In a sentence, an underscore between two words reads as a missing space rather than as styling.
That is why underscore emphasis works best for short strings that are obviously deliberate, such as a section label or a two-word name, and badly for anything people will read as prose.
Combining underlines are the fragile middle ground. They travel through some apps and collapse in others, and when they collapse the letters stay but the line disappears, which makes a carefully styled line look like a plain one.
For documents, use the editor's underline, which keeps the text editable, searchable, and accessible, and which never depends on how the character is encoded.
